CREATING FUNCTIONAL NUGGET FROM SKIPJACK FISH (KATSUWONUS PELAMIS L) WITH NONI FRUIT EXTRACT (MORINDA CITRIFOLIA L)

Abstract

Nugget Skipjack fish with noni fruit extract is a processed food from fish meat milled with the addition of noni fruit extract as a value-added (functional) on nugget products. Noni fruit is less favoured by the people due to the bitter taste and the, therefore, aroma sting, to utilize the noni fruit done the addition of an extract from noni fruit on nugget processed products. This research aims to produce functional nugget product from skipjack tuna with noni fruit extract and to know the chemical and physical content of nugget and alkaloid content in a nugget. The parameters were moisture content, ash content, fat content, protein content, carbohydrate content and alkaloid content. The experimental design used was Randomized Block Design with 3 treatments and 3 replications. Alkaloid content was present in all treatments. The best treatment based chemical test of nugget was F3 treatment (60% fish meat + 7% extract of noni + 23% filler + 10% ice water).
