FERMENTING MICRO-ORGANISMS : ISOLATION, CHARACTERIZATION AND BIOCONVERSION OF BAMBOO SHOOT STEROLS INTO ADD.

Abstract

Fermentation of the succulent shoot slices of Bambusa balcooa Roxb resulted in an enrichment of phytosterols content from 0.12 to 0.62 % dry wt. The fermenting microbial strains have been isolated and characterized for the first time from these fermented samples. Further extraction of crude phytosterols was done from these fermented bamboo shoot slices. Purification of crude. phyto9terols was done to isolate stigmasterol by TLC and identified by IR, UV and Mass spectral analysis. The isolated phytosterols were then subjected to microbial bioconversion to yield androstadienedione (ADD) in the incubation mixture in presence and absence of metabolic inhibitor using Arthrobacter globiformis.
