APPLICATION OF ANTIOXIDANTS IN RATIONS OF LACTATING COWS FOR INCREASING CONSUMER CHARACTERISTICS OF MILK AND PRODUCTS OF ITS PROCESSING

Abstract

There was problem of studying the productivity of cows, the commercial and technological properties of the products, as well as the physiological and biochemical status of their organism under the conditions of a sub toxic nitrate load when feeding epofen and vitamin C. The aim of the research was to study the effect of antioxidants epofen and vitamin C on the physico-chemical and technological properties of lactating cow milk at a sub toxic dose of nitrates in the diet. Cows of black and white breed were the object of the research. To conduct the experiment on the principle of analogues, four groups of 10 heads each were formed. The results of the research were processed using a package of mathematical analysis of the software “Microsoft Excel”. Synergism of the effect of vitamin C and epofen provided the highest level of protein and milk sugar in the produce of cows of the 3 experimental groups, which by these indicators reliably (P> 0.95) exceeded the control analogues by 0.26 and 0.28%. Joint additions of the preparations provided the greatest degree of detoxification of nitrates and nitrites in the cows of the 3 experimental group, which resulted in a significant decrease in the content of these xenobiotics in their milk as compared to the control (P> 0.95) by 47.4 and 53.0%. The absolute content of whey proteins in the milk of the analogues of the compared groups was almost the same, and in relative units the highest content of albumins and globulins was in the milk of the cows of control group - 24.5%, which is by 1.8 (P> 0.95) higher than in 3 experimental group. Regarding control samples, the experimental cheeses contained more soluble protein nitrogen, respectively, by 5.71; 4.06 and 7.01%, and non protein soluble – respectively by 3.01; 2.92 and 6.04% less. This indicates that the additives of epofen and vitamin C in the combined feed for cows of the 3 experimental groups contributed most to the gentrification of sodium nitrate and to the enhancement of the ecological and biological value of the Ossetian brine cheese.
