PEDIOCIN PRODUCTION BY PEDIOCOCCUS ACIDILACTICI NCIM 2292 IN FED BATCH AND REPEATED FED BATCH FERMENTATION USING GOAT MEAT PROCESSING WASTES

Abstract

Pediocin production by Pediococcus acidilactici NCIM 2292 has been studied in a bio-reactor under fed batch and repeated fed batch fermentation at constant pH condition using goat meat processing wastes. The repeated fed batch process was optimized with respect to parameters namely, medium replacement ratio and cycle time. The highest pediocin productivity of 182.86 AU/ mL/h was achieved at volume replacement of 80% and cycle time of 30 h. Multiplicative type dual-substrate (protein and glucose) model could describe kinetics of cell growth. Luedeking and Piret model was able to describe the correlation between the production of pediocin and lactic acid with cell growth. A mathematical model based on kinetic parameters, evaluated under the present study, has been developed for fed batch and repeated fed batch operation and has been validated through comparison of simulated data with experimental ones obtained from the bio-reactor.
