Abstract

An extracelluar protease producing bacteria were isolated and identified from seven different environmental conditions. Among these, poultry waste sample gave maximum proteolytic activity, around - ten units. Most patent procedure was identified as Bacillus spp. Enzyme activity was measured by using different assay methods based on the pH of the crude enzyme. Casein digestion method showed patent protease activity. Optimization studies showed skim milk and Soya bean meal to be the best nitrogen source for production of protease at pH 6 and the temperature 40°C to 50°C.
