CHARACTERIZATION OF EXOPOLYSACCHARIDE (EPS) PRODUCED BY LELICONOSTOC SP. V 41P. VIMALA AND D. LALITHAKUMARIAbstract The exopolysaccharide (EPS) of Leuconostoc sp. V 41, a soil isolate, is a homopolymer of glucose. The molecular weight was determined by gel permeation chromatography to be 46,968. Functional groups were determined by FT-IR and proton-NMR spectroscopic studies. The pure EPS was free of proteins, found to have glucose monomers (as established by osazone test) and was confirmed to be a polymer much similar to dextran but presence of certain alkyl groups made it a much complex structure than dextran.
