STUDIES ON BIOCHEMICAL AND MICRO AOIOGICAL QUALITY OF FISH IN RATNAGIRI HSH MARKET

Abstract

TMA- N values was varied from 0.39 to 1.5 mg N2 / 1 00 gm.The TVBN (Total volatile bases nitrogen ) varied 3.36 to 14.06 mg N2/100 mg.The microbiological and biochemical quality of fish in market situated in Ratnagiri.The total numbers of bacteria in markets were ranging from 1.3 m103cfu/grn to I .25X107cfu/gm. Feacal streptococci in fish flesh were ranging from nil to I .3x I 0 5/gm, Staphylococcus was found high in considerable high in number ranging from nil to 4.0x105/gm,Coliform bacteria the populations range between nil to 36 /gm and Salmonella are totally absent in the fish market. The main acceptability of based on bacteriological content was found to be 67.49% in Ratnagiri Fish market.All samples were collected from Ratnagiri fish market were acceptable based on biochemical quality.
