MICROBIOLOGICAL EVALUATION AND ACCEPTANCE OF STREET FOODS (SNACKS) SOLD IN AMJER CITY

Abstract

The study was aimed to evaluate the microbiological load and acceptance of street foods (snacks) sold in Ajmer city. Popular food items were selected to assess the microbial load and acceptability by the local population, from the popular food service centres of Ajmer city. The microbiological evaluation of food items showed high plate count, total coliform organisms and fungal contamination; ranging from 2.33 x to 3.77 x 108, 1.13x1On to 2.7x106 and 0.57x101 to 1.6 x104 respectively. The total acceptability of street food was 77.4% among the regular customers. Looking at the tremendous popularity of street foods, these centres cannot be banned; instead they should be taught significance of hygienic preparation and serving of food.
