The different immobilization matrices such as agarose, carrageenan, agarmgar and alginate were used for immobili.tion of perrneabilized yeast net Is for their use in the lactose hydrolysis. The yeast cells immobilized M different matrices showed varied degree of hydrolysis. Out of these tested matrices, alginate entrapped cells showed maximum lactose hydrolysis. The maximum lactose hydrolysis was observed with 2% holy) alginate concentration after 50 min of incubation period.
